About the role

Don Signature Coffee Bar is the specialty coffee concept within the Don Signature Crab group, serving third-wave espresso and single-origin pour-overs to a mix of local residents, families and weekend brunch-goers. The outlet focuses on high-quality beans, precise extraction and approachable latte art in a relaxed east-coast setting.

The Specialty Coffee Barista role is hands-on: you will manage espresso and filter coffee service, maintain equipment (espresso machine and grinders), manage stock for beans and milk, and deliver friendly, knowledgeable service. You'll work closely with the cafe manager and kitchen to coordinate coffee service for the breakfast and brunch crowd as well as afternoon trade.

Key responsibilities

  • Pull consistent espresso shots and prepare milk texturing to café standards (flat whites, cappuccinos, lattes).
  • Brew pour-over and batch-brew coffee to order, ensuring correct recipes and temperature control.
  • Operate and maintain espresso machines, grinders and brewing equipment; perform daily cleaning and calibration.
  • Manage coffee bean inventory, record batch usage and assist with ordering specialty beans and supplies.
  • Prepare drinks quickly and accurately during peak periods while maintaining quality and presentation.
  • Deliver friendly customer service, explain coffee origin/roast notes and make product recommendations.
  • Support opening and closing duties including cash handling, POS reconciliation and shift handovers.
  • Help train junior baristas on standard recipes, equipment use and hygiene procedures.

Requirements

  • At least 1–2 years' experience working as a barista in a specialty coffee shop or café.
  • Solid knowledge of espresso extraction, milk texturing and pour-over methods (V60, Chemex, AeroPress).
  • Able to work early mornings, weekends and public holidays on a rotational roster.
  • Good communication and customer-service skills; comfortable talking about coffee origin and tasting notes.
  • Basic food hygiene knowledge; willingness to obtain Basic Food Hygiene Certificate if not already held.
  • Physically fit for standing shifts and handling 5–10kg stock items; attention to cleanliness and detail.
  • Right to work in Singapore (Singapore citizen/PR or valid work pass).

Work schedule

Typical week: 5.5 days per week with rostered weekends and public holidays on rotation.

  • Morning open shift (06:30–14:30) covering breakfast and early lunch
  • Afternoon shift (11:30–19:30) covering lunch and brunch overlap
  • Split-shift or extended weekend shifts during peak brunch hours
