About the role

Don Signature Crab & Wine Bar is an upscale seafood and crab concept located in Singapore's CBD, focused on fresh shellfish, bold flavours and a curated wine list that complements our menu. We service a mix of corporate lunch crowds, private dinners and after-work guests for happy hour and dinner service.

The Sommelier / Wine Specialist will own the wine programme: selecting and maintaining stock, designing pairings with our signature crab dishes, training FOH staff and running tastings and private wine events. You'll work closely with the Head Chef and FOH manager to ensure consistency of service and to grow wine sales through thoughtful recommendations and promotions.

This role is ideal for someone with strong wine knowledge (Old and New World), experience in a busy restaurant or wine bar environment, and a passion for pairing wines with rich, flavour-forward seafood. Key responsibilities

  • Develop, maintain and merchandise a balanced wine list that complements the seafood/crab-focused menu
  • Provide confident table-side recommendations and wine-by-the-glass suggestions to increase attach rates
  • Manage cellar and wine stocks: temperature control, rotation, receiving and record-keeping
  • Source new wines and liaise with local importers and distributors to negotiate pricing and availability
  • Plan and host wine tastings, pairings and private events to grow wine sales and brand presence
  • Train FOH staff on wine knowledge, service techniques, decanting and tasting notes
  • Monitor sales, prepare weekly inventory reports and manage stock re-ordering to minimise shrinkage
  • Ensure compliance with licensing, storage and service regulations related to alcohol
  • Work with marketing to promote wine offers, pairing menus and special events

Requirements

  • Minimum 3 years' relevant experience in a sommelier, wine specialist or senior FOH role in restaurants or wine bars
  • Strong working knowledge of Old and New World wine regions and varietals, and ability to create seafood-focused pairings
  • Practical cellar management experience including stock control and temperature/condition monitoring
  • Excellent guest-facing communication skills and confident table-side service
  • Familiarity with POS systems, stock reports and basic costing for wine lists
  • Ability to work flexible hours including evenings, weekends and public holidays
  • Eligible to work in Singapore and able to attend in-person interviews and tastings

Work schedule

Typical week: 5.5 days per week, including weekends and public holidays on rotation.

  • Lunch-to-early-evening shift (10:00–18:00) covering CBD lunch and private events
  • Evening shift (16:00–23:30) for dinner service and tastings
  • Occasional split shifts and late-night private event coverage
