About the role
Bistro Éclat is a contemporary French fine-dining restaurant located in the leafy Dempsey enclave, known for a curated wine list, seasonal tasting menus and attentive service. We serve a mix of regulars, expatriates and food-savvy locals who appreciate thoughtful pairings and an intimate dining atmosphere.
The Sommelier will be responsible for the full guest wine experience — from greeting and recommending by-the-glass and bottle pairings to cellar management, purchasing and supplier relations. You will work closely with the Head Chef and FOH management to design pairings for a rotating tasting menu, lead wine tastings and be an ambassador of the restaurant's wine programme.
This role suits a proactive, service-minded wine professional who can balance front-of-house presence with back-of-house inventory control. Opportunities include leading small tasting events, contributing to menu development and mentoring junior wine staff. Regular evening shifts, weekend service and occasional public-holiday coverage are expected.

Key responsibilities
- Provide confident, knowledgeable wine service and recommendations to guests, including by-the-glass and bottle options
- Manage and maintain the wine cellar: stock control, vintage tracking, storage conditions and rotation
- Design and present wine pairings for tasting menus in collaboration with the Head Chef
- Source wines and manage relationships with distributors and boutique importers; negotiate pricing and terms
- Plan and run in-house wine tastings, supplier masterclasses and special pairing events
- Train and mentor junior wine staff and front-of-house team on wine service and tasting notes
- Maintain wine lists, tasting notes and pricing; update POS and wine menu as needed
- Ensure compliance with alcohol service regulations, hygiene standards and cellar safety protocols
Requirements
- Minimum 3–5 years experience in fine-dining wine service or similar sommelier role
- Solid knowledge of Old World and New World wine regions, varietals and vintages
- Strong guest-facing communication skills and confident table-side manner
- Practical skills in decanting, glassware selection, and cellar management
- Experience working with wine suppliers and handling purchasing and invoices
- Flexible to work evenings, weekends and public holidays on a roster
- Singapore work eligibility (Singapore Citizen, PR or valid work pass)

Work schedule
Typical week: 5.5 days per week; rostered including evenings, weekends and public holidays on rotation.
- Evening service (typical 5:00pm–11:00pm)
- Occasional lunch service or private event days (day shifts)
- Split shifts during peak periods for prep and service or for wine-tasting events
