Roast Meat Cutter
About the role
Don Signature Crab is a casual seafood-and-local-delights concept with a strong lunchtime and dinner customer base. While famous for our crab dishes, we also serve house-roasted meats and rice bowls, and we need a skilled Roast Meat Cutter to ensure consistent portioning, attractive display and fast service during peak periods.
The Roast Meat Cutter will work closely with the kitchen and front-of-house teams to carve and prepare roast pork (siu yuk), char siew and roast duck to order, manage the roast display cabinet, and assist with basic marinade and prep under the head chef's guidance. This is a hands-on, physically active role suited to candidates comfortable working in high-volume hawker-style or kopitiam-style operations.
This position offers stable hours, on-the-job training and potential progression into senior prep or line cook roles for consistent performers. If you take pride in neat, uniform cuts and maintaining food-safety standards, you will fit well in our team.

Key responsibilities
- Carve and portion roast pork (siu yuk), char siew and roast duck to order with consistent portion sizes
- Maintain and rotate roast meat display cabinet; replenish and label items for sale
- Assist with marinating, injecting and prepping meats under supervision
- Ensure knives and cutting stations are sharp, clean and safely maintained
- Follow HACCP and local food-safety practices, including temperature control and storage
- Weigh and portion items for rice bowls and takeaway packaging during peak service
- Monitor stock levels and inform supervisor of low supplies or quality issues
- Help clean and sanitize work area, tools and equipment at the end of shift
Requirements
- Minimum 1 year of hands-on experience cutting roast meats in a restaurant, hawker stall or roast house
- Proficient knife skills and comfortable using cleaver and carving knives
- Understanding of basic food-safety practices; Basic Food Hygiene certification preferred
- Physically fit and able to stand for long periods and handle heavy carcasses and trays
- Willingness to work early mornings, evenings, weekends and public holidays on rotation
- Good communication in English and/or conversational Mandarin for kitchen coordination
- Eligible to work in Singapore (Singaporean, PR or valid work pass holder)

Work schedule
Typical week: 5.5 days per week, including weekends and public holidays on rotation.
- Early morning prep shift (05:00–14:00)
- Split lunch/dinner shift (10:00–15:00 and 17:00–22:30)
- Straight evening shift (14:00–23:00) depending on business needs
