About the role

Don Signature Crab is a boutique fine-dining seafood restaurant located in Marina Bay, specialising in modern Singaporean seafood dishes with an emphasis on signature crab preparations and a curated wine and champagne list. We serve a mix of business lunch guests, upscale families and destination diners looking for a premium, personalised dining experience.

The Restaurant Manager will run daily front-of-house operations, ensuring consistent high-touch service, managing reservations and private dining, and maintaining standards across guest interactions, service sequences and presentation. You will work closely with the executive chef and ownership to deliver cohesive guest journeys from arrival to departure.

Key responsibilities

  • Oversee all front-of-house operations across lunch, dinner and private dining services
  • Recruit, train and roster FOH team (captains, servers, hosts, bar staff)
  • Maintain and refine service SOPs, table management and reservation practices
  • Manage guest relations, handle feedback and resolve service issues promptly
  • Drive revenue through upselling, menu knowledge and efficient covers management
  • Monitor service quality, pacing and coordination with kitchen during service
  • Control FOH costs including labour scheduling, petty cash and inventory of service items
  • Liaise with suppliers and coordinate special events, private dining and group bookings

Requirements

  • Minimum 3–5 years' experience in restaurant management, preferably in fine dining or upscale seafood concepts
  • Proven track record leading a FOH team of 10+ staff and managing busy shifts
  • Strong service knowledge, reservation systems and POS experience
  • Good financial sense — experience with basic P&L, labour scheduling and stock control
  • Excellent communication skills in English; Mandarin proficiency is an advantage
  • Flexible availability for evenings, weekends and public holidays on rotation
  • Valid food safety or hygiene certification (e.g. Basic Food Hygiene or equivalent)
  • Singapore work eligibility (Singapore Citizen, PR or valid Employment Pass/S Pass)

Work schedule

Typical week: 5.5 days per week, rostered; includes weekends and public holidays on rotation.
