About the role

Don Signature Crab is a popular casual seafood restaurant in the CBD known for chilli crab, black pepper crab and seafood platters that attract a strong lunch and dinner crowd. We combine hawker-style flavours with comfortable table service and high-turnover weekday covers from office workers and dinner guests on evenings and weekends.

The Restaurant Manager will oversee all front-of-house operations: rostering, service standards, reservations, cash handling and close coordination with the kitchen to ensure timely, high-quality service. You will be the primary point of contact for customers and the management team, responsible for driving revenue and controlling labour and stock costs.

Key responsibilities

  • Manage daily front-of-house operations, ensuring smooth service during lunch and dinner peaks.
  • Recruit, train and mentor FOH staff; conduct regular performance reviews and coaching.
  • Create and manage weekly rosters to control labour costs while meeting service needs.
  • Oversee reservations, walk-ins and large group bookings; optimise table turns for peak periods.
  • Monitor daily sales, implement upsell strategies and work with management to meet revenue targets.
  • Control cash handling, POS reconciliation and end-of-day reporting.
  • Coordinate with the kitchen to maintain timing, portion control and food quality standards.
  • Maintain hygiene, safety and licensing compliance; lead pre-service briefings and post-service debriefs.
  • Handle guest feedback and complaints professionally, turning issues into positive outcomes.

Requirements

  • Minimum 3 years' restaurant management experience in full-service, fast-casual or seafood concepts.
  • Proven track record managing FOH teams of 8–20 staff in a high-turnover environment.
  • Strong commercial acumen: experience with P&L targets, labour and stock control.
  • Familiarity with POS systems, reservations platforms (e.g. Chope, Quandoo) and basic Excel reporting.
  • Excellent customer service and communication skills in English; Mandarin or Malay is a plus.
  • Ability to work evenings, weekends and public holidays on a rotational basis.
  • Knowledge of food safety, SIP/HPB requirements and alcohol licensing procedures.

Work schedule

Typical week: 5.5 days per week, including evenings, weekends and public holidays on rotation.

  • Split shifts covering lunch (10:30–15:00) and dinner (17:00–22:30).
  • Straight shifts on quieter days (10:00–18:30) or dinner-only shifts (16:30–23:00).
  • On-call for events or large group bookings during peak seasons.
