About the role

Don Signature Crab is a fast-growing local seafood restaurant group known for live and frozen crab dishes, zi char-style mains and a strong weekend dining following. We operate a central kitchen and multiple outlets across the island, serving both dine-in and delivery channels.

The Procurement Executive will be responsible for end-to-end purchasing of chilled, frozen and dry food supplies, vendor negotiation, quality checks and stock planning to support steady kitchen operations. You will work closely with the head chef, central kitchen team and outlet managers to ensure cost-effective procurement while maintaining food safety and product consistency.

This role suits a pragmatic, organised buyer with practical knowledge of seafood and produce sourcing, experience dealing with local wet markets and import suppliers, and the ability to manage logistics for timely deliveries. There is clear career progression into senior procurement or supply-chain supervisor roles as the group grows.

Key responsibilities

  • Source, evaluate and manage suppliers for chilled, frozen, dry goods and packaging materials
  • Negotiate prices, payment terms and delivery schedules to achieve cost savings without compromising quality
  • Raise and track purchase orders using the company ERP; ensure accurate receiving documentation
  • Manage inventory levels and reorder points for central kitchen and outlets to minimise stockouts and overstock
  • Perform regular quality checks on incoming seafood, produce and dry goods; coordinate returns for non-conforming items
  • Coordinate cold-chain logistics and delivery timetables with transport partners and outlet teams
  • Maintain supplier records, certifications (SFA, HACCP where applicable) and update approved vendor lists
  • Work with head chef and culinary team on seasonal menu ingredient sourcing and cost control initiatives
  • Support month-end reconciliation of purchase ledgers and basic PO-cost variance reporting
  • Conduct supplier visits and audits as required to ensure food safety and traceability

Requirements

  • Minimum 2–4 years procurement or purchasing experience in F&B, seafood distribution, central kitchen or hotel operations
  • Practical knowledge of seafood handling, frozen/chilled supply chain and basic food safety requirements (SFA/HACCP awareness)
  • Proven negotiation skills and experience managing multiple suppliers
  • Familiarity with inventory management and purchase order systems (ERP experience advantageous)
  • Strong organisational skills, attention to detail and ability to prioritise under busy operational timelines
  • Willingness to travel island-wide to meet suppliers and conduct inspections; able to lift/move stock occasionally
  • Good communication skills in English; conversational Mandarin is a plus for dealing with some suppliers
  • Available to work standard office/warehouse hours with occasional early mornings for supplier deliveries

Work schedule

Typical week: 5.5 days per week; primarily weekdays with occasional weekend or early-morning supplier meetings on rotation.

  • Occasional evening coordination for late deliveries or promotions
