About the role
Join Don's Signature Crab’s kitchen team as a Prata Chef / Flipper. While our core concept is coastal seafood, several outlets operate adjacent kopitiam-style counters serving breakfast and supper prata — fast-paced, high-volume service with repeat regulars and delivery orders.
You will be responsible for making a range of flatbreads (plain, egg, cheese, and stuffed variants), working at a hotplate or tawa, and maintaining consistent product quality during peak breakfast and supper periods. This role suits someone who is used to the tempo of hawker-style or kopitiam cooking and enjoys direct, hands-on preparation.

Expect a mixture of walk-in customers, regulars from the neighbourhood and delivery platform orders during peak hours.

Key responsibilities
- Prepare, stretch, fold and flip prata and flatbreads to recipe standards on tawa/hotplate
- Operate a high-volume station during breakfast and supper peak periods maintaining speed without sacrificing quality
- Prepare related items (egg, cheese, onion, murtabak fillings) and assemble orders for dine-in and delivery
- Follow portioning and plating guidelines to ensure consistent servings
- Maintain food safety and personal hygiene; clean and sanitize work surfaces and equipment
- Manage simple inventory for the station and report low-stock items to the shift leader
- Assist with opening/closing duties including prep, refilling condiments and cleaning the tawa
- Support junior kitchen colleagues and be prepared for short cross-training in other prep tasks
Requirements
- Minimum 1 year experience flipping prata, roti canai or similar flatbread in a hawker/kopitiam or casual eatery
- Comfortable working in a hot, fast-paced kitchen and standing for long periods
- Ability to work morning and/or evening shifts, weekends and public holidays on rotation
- Basic understanding of portion control, timings and temperature management on a tawa/hotplate
- Able to follow recipes and maintain consistent product quality under pressure
- Good communication in English; Malay or Tamil a plus for customer interaction in some outlets

Work schedule
Typical week: 5.5–6 days per week, including weekends and public holidays on rotation.
- Morning peak: 05:30–14:00 (breakfast to early lunch)
- Evening/supper: 14:00–23:00 (prep through dinner and supper)
- Possible split shifts during busy periods depending on outlet needs
