About the role

Little Red Patisserie is a neighbourhood artisan bakery in Tiong Bahru known for daily-baked croissants, speciality cakes and seasonal pastries. We serve a mix of local morning crowd, cafe regulars and weekend bakery shoppers, combining classic French techniques with local flavours.

The Pastry Assistant will support the pastry team across dough preparation, laminating, portioning, baking and finishing. Expect early starts (pre-dawn production), fast-paced prep for breakfast service and careful attention to yield, storage and hygiene standards. The role suits someone with basic pastry experience who wants hands-on training and clear progression to Pastry Cook.

You will work closely with our Head Pastry Chef and two other bakers in a compact central-kitchen style layout. We offer structured on-the-job training, opportunities to learn lamination, butter handling and cake assembly, and a stable schedule with overtime paid according to employment law.

Key responsibilities

  • Prepare ingredient mise-en-place for pastries, viennoiserie and cakes according to recipes and production lists
  • Operate mixers, dough sheeters and ovens under supervision; monitor bake times and temperatures
  • Laminating dough support: folding, benching and maintaining chilled stock under guidance
  • Portion, shape and finish pastries for morning service (croissants, danishes, buns)
  • Assemble basic cakes and tarts; pipe creams and apply simple decorations as instructed
  • Label, date and store finished goods using FIFO and temperature-controlled procedures
  • Clean and sanitise workstations, small equipment and tools at end of shift to comply with hygiene standards
  • Assist with stock counts, inventory rotation and receiving deliveries when required

Requirements

  • Minimum 6 months to 2 years' experience in a bakery, patisserie or café production environment
  • Basic knowledge of pastry terminology and techniques (mixing, proofing, basic lamination)
  • Comfortable with early starts (typical reporting time 03:00–05:00) and standing for long periods
  • Ability to follow recipes, measure accurately and maintain consistency
  • Good personal hygiene and understanding of food safety (HACCP / basic food handlers knowledge)
  • Able to lift and move ingredients/boxes up to 20kg safely
  • Willingness to work weekends and public holidays on a rotational basis

Work schedule

Typical week: 5.5 days per week, rostered with weekend and public holiday rotations.

  • Early morning production shift (typical 03:00–12:00)
  • Split shift for some roles during peak seasons (preparation + late afternoon finish)
  • Occasional evening shifts for events or cake staffing
