About the role

Don Signature Crab is a busy seafood restaurant known for its signature crab dishes and lively bar service. We blend casual local seafood dining with carefully crafted cocktails designed to complement bold, spicy flavours. Our bar serves a mix of hotel‑trade, neighbourhood diners and weekend groups, with steady evening covers and private-event bookings.

The Senior Mixologist / Bartender will lead the bar team, drive cocktail menu development, maintain high standards of service and ensure efficient bar operations. You will work closely with kitchen leadership to create drink pairings for crab and other shellfish, manage stock and vendor relationships, and deliver training to bartenders and barbacks. This role suits an experienced mixologist who can manage busy dinner and weekend shifts, take ownership of the beverage program and help grow our bar reputation in the market.

This is a hands-on senior role offering scope for creativity (seasonal cocktail launches), stable hours with peak evening trade, and progression into bar supervisory or multi-outlet management for the right candidate.

Key responsibilities

  • Lead and manage the bar team during shifts, including rostering, training and daily briefings
  • Design and update cocktail menus that pair well with spicy and seafood-forward dishes
  • Prepare and serve cocktails to a high, consistent standard during peak dinner and weekend services
  • Manage bar inventory, ordering and supplier relationships to control costs and ensure stock availability
  • Ensure compliance with Responsible Service of Alcohol and local health & safety regulations
  • Maintain bar cleanliness, equipment maintenance and correct storage of spirits and perishable mixers
  • Handle cash and POS procedures accurately, and assist with shift closing reports
  • Work with management on promotions, events, private functions and off-site catering requests
  • Coach junior bartenders and barbacks in technique, speed and product knowledge

Requirements

  • Minimum 4 years' bartending/mixology experience, with at least 1–2 years in a senior or supervisory role
  • Strong knowledge of spirits, classic and contemporary cocktail techniques, and flavour balance
  • Proven experience developing cocktail menus and costing drinks for profitability
  • Comfortable working evening shifts, weekends and public holidays; flexible roster availability
  • Good command of English for guest interaction; additional languages (Mandarin) advantageous
  • Familiarity with POS systems, inventory management and basic cash handling
  • Eligible to work in Singapore (citizen/PR/valid work pass) and able to provide references from recent employers

Work schedule

Typical week: 5.5 days per week, including evenings, weekends and public holidays on rotation.

  • Evening shifts: typically 4:00pm–12:00am
  • Late shifts: 6:00pm–1:00am for busy service nights or events
  • Day/event shifts: occasional 9:00am–5:00pm for private functions or tastings
