Management Trainee (F&B)
About the role
Don Signature Crab is a casual seafood restaurant known for chilli crab, black pepper crab and zi char-inspired sharing plates. We serve families, office crowds and expatriates across lunch and dinner; our Katong outlet is busy on weekends and during peak dinner hours. The Management Trainee (F&B) role is a structured, hands-on development position designed to fast-track talent into supervisory and outlet management roles across the group.
You will rotate through FOH (service, cash handling, reservations), kitchen stations (prep, plating, basic wok/cook tasks), and back-office responsibilities including inventory, basic P&L tracking and rostering. Expect a mix of practical floor shifts and classroom-style training with senior managers. This is a great opportunity if you want accelerated progression, leadership training and broad exposure to a high-volume seafood / zi char concept.
Successful candidates will leave the programme ready to lead a small team, run shifts independently and contribute to operational improvements. We offer on-the-job mentoring, skill-based training and clear progression pathways into Assistant Manager and Outlet Manager roles within the group.

Key responsibilities
- Rotate through front-of-house and kitchen stations to learn daily operations and service standards
- Assist with opening and closing procedures, including stock checks and end-of-day reconciliation
- Support rostering and ensure shifts are properly staffed under manager guidance
- Handle customer enquiries and feedback professionally; escalate issues when required
- Learn food cost control, portioning and basic inventory management
- Support basic administrative tasks: sales reporting, POS reconciliation and supplier communication
- Assist in on-the-job training for junior crew and walk-throughs on SOPs and hygiene standards
- Take part in menu tasting sessions and provide practical feedback on plating and portion sizes
Requirements
- Diploma or GCE 'A' Levels or equivalent; fresh graduates with relevant interest in F&B encouraged to apply
- 0–2 years' experience in F&B, retail or hospitality preferred; previous service or kitchen experience is an advantage
- Strong service orientation, good English communication and basic Mandarin helpful
- Willingness to work flexible hours including evenings, weekends and public holidays
- Physically able to stand for long periods and assist with lift/carry tasks in a busy kitchen
- Proactive, coachable and able to take direction from senior staff
- Right to work in Singapore (Singapore Citizen, PR or valid work pass)

Work schedule
Typical week: 5.5 days per week, including weekends and public holidays on rotation.
- Split shifts covering lunch and dinner service (e.g. 10:00–14:30 & 17:00–22:30)
- Straight shifts (e.g. 09:00–18:00 or 14:00–23:00) depending on rotation
- Occasional late/extended shifts for events or preps
