About the role
Tuscan Table Singapore is an upscale Italian restaurant blending traditional Tuscan techniques with contemporary plating. Located between Orchard and Dempsey Hill, we serve a mix of neighbourhood regulars and an upscale dinner crowd, with a strong focus on handmade pasta, wood‑fired dishes and seasonal produce.
The Head Chef Italian will be responsible for menu development, quality control and full kitchen management. You will lead a small brigade (sous, saucier, pasta chef, commis), manage supplier relationships for imported Italian ingredients, and ensure consistent execution across lunch and dinner services, as well as private dining and special events.
This role is ideal for a culinary leader who wants to shape a signature Italian fine-dining programme in Singapore, mentor junior cooks and help grow a consistent, high-performing kitchen. Key responsibilities
- Lead daily kitchen operations and coordinate service for lunch, dinner and private events
- Design and update seasonal Italian menus, including house‑made pasta and specials
- Train, mentor and roster the kitchen team; conduct regular performance reviews
- Maintain food quality, portion control and presentation standards
- Manage food cost, inventory, supplier relationships and ordering for imported Italian ingredients
- Ensure full compliance with Singapore food safety regulations (HACCP, SFA requirements) and kitchen hygiene standards
- Oversee kitchen scheduling, labour cost control and shift handovers
- Run trials for new dishes, tasting menus and special event offerings
Requirements
- Minimum 6–8 years' professional culinary experience with at least 3 years in a senior or head chef role
- Proven background in Italian cuisine (regional knowledge of pasta, sauces, wood‑fired cooking)
- Experience managing a team in a fine-dining environment and coaching junior cooks
- Strong menu development skills and knowledge of food costing and supplier management
- Competent in kitchen operations including inventory, ordering and FIFO practices
- Familiarity with Singapore food safety standards and ability to implement HACCP procedures
- Flexible to work evenings, weekends and public holidays on rotation
- Good command of English; basic Italian language skills are a plus but not mandatory

Work schedule
Typical week: 5.5 days per week, including weekends and public holidays on rotation.
- Split shifts covering lunch (11:00–15:00) and dinner (17:00–23:00)
- Occasional long evening service until 00:00 for special events
- Early mornings for deliveries and prep on scheduled days
