Hawker Apprentice (Heritage Food Program)
About the role
Join Don Signature Crab's Heritage Food Program as a Hawker Apprentice and learn the art of hawker cooking in a busy, community-focused environment. This role is ideal for someone passionate about Singapore’s hawker heritage and keen to gain practical skills working alongside seasoned cooks in a hawker-centre-style kitchen.
You will be trained on ingredient prep, basic wok and seafood handling, portioning and plate-up, and simple customer-facing tasks in a high-turnover setting (kopitiam / hawker centre rhythm). The programme combines on-the-job mentoring with structured training sessions and basic food hygiene certification provided by the employer.
This is a hands-on, fast-paced position with regular morning and evening services, serving a mix of breakfast, lunch and dinner crowds. Successful apprentices will gain transferable skills for careers as a hawker operator, line cook, or kitchen supervisor within Singapore’s F&B scene.

Don Signature Crab is a Singapore-based seafood and hawker-style operator known for its crab dishes and casual, community-minded dining experience. We run hawker-style stalls and small-format outlets focused on traditional flavours with consistent quality and approachable prices.

Key responsibilities
- Assist with daily prep: washing, chopping and portioning ingredients under supervision.
- Support wok and seafood stations during service: basic cooking tasks and plating.
- Learn and follow standard recipes and portion controls to maintain consistency.
- Maintain high standards of cleanliness and hygiene in the stall / kitchen area.
- Help with stock rotation, receiving deliveries and simple inventory checks.
- Prepare simple side dishes and accompaniments according to instructions.
- Engage politely with takeaway and queueing customers when required.
- Participate in scheduled training sessions and complete company-provided certifications.
Requirements
- Minimum 18 years old and eligible to work in Singapore.
- Basic kitchen or food-handling experience preferred but not required — we welcome beginners.
- Willingness to work in a hot, busy hawker-centre environment for extended periods.
- Flexible availability including mornings, evenings, weekends and public holidays on rotation.
- Physically fit for standing long hours and lifting moderate loads (crates, boxes).
- Good attitude, punctuality and willingness to learn from senior cooks and mentors.
- Ability to follow instructions, maintain hygiene standards and work as part of a team.

Work schedule
Typical week: 6 days per week with rostered rest days; includes weekends and public holidays on rotation.
- Morning prep / breakfast shift: 06:00–14:00
- Lunch to early evening: 10:30–18:30
- Split / late shift for busy outlets: 12:00–21:00 (with breaks)
