Halal Assurance Officer
About the role
Don Signature Crab is a busy seafood-focused restaurant group with a central kitchen serving multiple outlets and delivery channels. We maintain halal certification for our operations and are looking for a hands-on Halal Assurance Officer to ensure that our processes, suppliers and kitchen practices meet MUIS requirements and internal standards.
The Halal Assurance Officer will work closely with production, procurement and outlet teams to maintain segregation, traceability and correct labelling, conduct internal audits and prepare for external MUIS inspections. This role is ideal for someone with practical F&B experience who understands kitchen workflows and can translate regulatory requirements into clear, operational procedures.
You will have the opportunity to shape halal SOPs across a growing group, lead training for frontline staff, and be part of continuous improvement projects that touch food safety, supplier management and product development. Strong communication and an organised approach to documentation are essential; occasional weekend or early-morning checks and audit support will be required.

Key responsibilities
- Maintain and manage MUIS Halal certification documentation and ensure timely renewals
- Develop, implement and update halal SOPs across central kitchen and outlets
- Conduct regular internal halal audits and prepare action plans for non-conformances
- Verify halal status of suppliers and raw materials, maintain approved supplier lists and supporting documentation
- Ensure proper product segregation, storage, handling and labelling to prevent cross-contamination
- Coordinate and host external inspections and audits by MUIS or other certifying bodies
- Train kitchen and outlet staff on halal procedures, traceability and record-keeping
- Work with procurement to review supplier contracts and halal certificates, and lead supplier on-site assessments as needed
- Maintain accurate records, manage HACCP-related documentation and liaise with QA on overlapping food safety matters
- Investigate halal-related incidents, implement corrective actions and report to senior management
Requirements
- Diploma or degree in Food Science, Food Technology, Nutrition, Hospitality or related field, or equivalent practical experience
- Minimum 2–4 years' experience in halal assurance, QA or compliance within F&B operations or central kitchens
- Practical knowledge of MUIS halal certification requirements and halal auditing practices in Singapore
- Familiarity with HACCP, GMP and basic food safety principles
- Strong documentation skills and experience preparing for external audits
- Good communication skills in English; ability to conduct staff training sessions confidently
- Proficient with MS Office (Excel, Word) and comfortable maintaining digital records
- Ability to work on-site full-time and attend early morning checks, outlet visits or occasional weekend audits

Work schedule
Typical week: 5.5 days per week; includes occasional weekends and public holidays for audits or outlet support on rotation.
- Office-style daytime hours (typically 9am–6pm) for documentation and supplier work
- Early morning site checks before outlet opening (e.g. 6am–9am) on scheduled days
- Occasional after-hours or weekend audit support when required
