About the role

The Inhouse Chef Singapore operates a busy central kitchen supplying hotels, cafes, kopitiam-style breakfast kiosks and corporate catering across the island. We combine traditional hawker-inspired recipes with modern food-safety systems, producing fresh and chilled products for a mixed customer base including CBD office lunches and heartland deliveries.

The QA Officer will be responsible for maintaining HACCP-based control measures, performing routine microbiological and physical checks, managing temperature logbooks and supplier documentation, and supporting product release decisions. You will work closely with production, procurement and R&D teams to ensure labelling accuracy, allergen control and regulatory compliance with Singapore Food Agency (SFA) requirements.

This role suits someone who is methodical, hands-on during production hours (early mornings and occasional night testing), comfortable with documentation and audits, and keen on continuous improvement. The position offers on-the-job training, exposure to multi-outlet operations and opportunities to lead small quality projects as the business scales.

Key responsibilities

  • Implement and maintain daily quality control checks (temperature logs, visual inspection, weight/portion checks)
  • Conduct routine microbiological and chemical sampling in coordination with external labs
  • Maintain and update HACCP plans, SOPs and product specifications
  • Manage raw material and supplier documentation, conduct supplier verifications and periodic audits
  • Monitor allergen controls, labelling accuracy and shelf-life/stability records
  • Support investigations into product complaints, non-conformances and corrective actions, including traceability and recalls when necessary
  • Calibrate and maintain QC equipment, and maintain accurate QC logs and batch release records
  • Assist with internal and external audits (SFA, ISO/HACCP/BRC) and training of production staff on hygiene and food-safety practices

Requirements

  • Diploma or degree in Food Technology, Food Science, Microbiology, Nutrition or related field
  • Minimum 2–4 years' experience in food quality assurance or QC role within a central kitchen, food manufacturing or large F&B operation
  • Working knowledge of HACCP, good manufacturing practices (GMP) and Singapore Food Agency (SFA) regulations
  • Experience performing temperature control, microbiological sampling and batch release procedures
  • Proficient in MS Office and comfortable with maintaining digital and paper-based records
  • Detail-oriented with good communication skills in English; ability to liaise with production and suppliers
  • Willingness to work early mornings and occasional extended hours for audits or product trials; able to enter production areas and use PPE

Work schedule

Typical week: 5.5 days per week; includes weekend coverage on rotation and occasional public holiday duties.

  • Morning shift: typically 06:00–15:00 (routine QC during production runs)
  • Day shift: 08:00–17:00 (administration, supplier coordination, audits)
  • Occasional evening or split shifts for shelf-life testing or external audits
