About the role

The InHouse Chef Singapore operates a central kitchen supporting a portfolio of casual dining brands, kopitiam concepts and hawker-style stalls across the island. We serve a mix of CBD lunch crowds, heartland malls and catered events, and we prioritise consistent food safety and operational compliance.

The Food Hygiene Officer will be responsible for day-to-day hygiene oversight, internal audits and corrective actions across the central kitchen and satellite outlets. You will work closely with kitchen supervisors, operations managers and suppliers to ensure compliance with SFA and industry best-practice standards, implement HACCP controls and lead staff training programmes.

We combine consistent recipes, standardised processes and regular product development to serve both retail outlets and corporate catering.

Key responsibilities

  • Conduct daily hygiene checks and monthly internal audits across central kitchen and satellite outlets; document findings and follow up on corrective actions
  • Maintain and update HACCP plans, SSOPs and SOP documentation to reflect process changes
  • Monitor cold chain, temperature logs and cleaning schedules; verify calibration of thermometers and recording devices
  • Liaise with suppliers, pest control and maintenance teams to resolve contamination or equipment issues
  • Prepare and support external inspections from SFA, NEA or other regulatory bodies and ensure timely closure of non-conformances
  • Deliver regular staff training on food safety, personal hygiene, allergen controls and proper sanitation practices
  • Investigate any food safety incidents or customer complaints and coordinate root cause analysis and corrective actions
  • Generate weekly and monthly compliance reports for operations leadership and recommend continuous improvement initiatives

Requirements

  • Minimum 2–4 years' experience in a food safety, QA or hygiene role within a central kitchen, hotel or multi-outlet F&B group
  • Relevant qualification such as Diploma in Food Technology/Food Science, WSQ Food Hygiene Course or equivalent
  • Practical knowledge of HACCP principles and Singaporean food regulations (SFA guidelines)
  • Strong attention to detail with experience in audits, checklists and corrective action tracking
  • Good communication skills in English for training and report writing; ability to speak Mandarin or Malay is a plus for frontline training
  • Able to travel between outlets island-wide and work occasional evenings for deep-clean supervision or incident response
  • Legally eligible to work in Singapore

Work schedule

Typical week: 5.5 days per week, including weekends on rotation; occasional public holiday on-call duties for incident support.

  • Day shifts (typical 0800–1700) for inspections, audits and training
  • Occasional early starts (0500–1400) for production line oversight and temperature checks
  • On-call rotation for after-hours incidents or deep-clean supervision
