About the role

The Inhouse Chef Co. operates a 1,200 sqm central kitchen serving a portfolio of casual restaurants, hawker-style concepts and delivery channels across Singapore. We produce cooked meals, sauces, chilled ready-to-eat items and packed components for high-volume weekday lunch services and weekend catering.

We are looking for a Production Manager to lead the production team, maintain HACCP and workplace safety standards, and improve production flow and yield. The role suits a hands-on manager who understands both kitchen operations and light food manufacturing processes — blast-chill, sous-vide, vacuum-packing and cold-chain logistics.

You will work closely with culinary development, procurement and operations to ensure on-time delivery to outlets, tight portion control and consistent quality. This is a stable, growth-oriented position with opportunities to shape processes, train supervisors and progress into group operations leadership.

Key responsibilities

  • Plan and manage daily production schedules to meet outlet and delivery deadlines
  • Oversee quality control checks, portioning accuracy and finished-goods inspection
  • Maintain HACCP documentation, batch records and ensure food safety compliance
  • Manage and coach a team of supervisors, line cooks, packers and dispatch staff
  • Coordinate raw material requisition with procurement and monitor stock usage
  • Implement process improvements to reduce waste, improve yield and increase throughput
  • Schedule and supervise cleaning, equipment maintenance and preventive servicing
  • Liaise with logistics partners and internal operations for delivery planning and contingencies
  • Prepare production reports, yield analyses and variance explanations for senior management

Requirements

  • Minimum 4–6 years' experience in a central kitchen, food manufacturing or high-volume catering environment
  • Proven people management experience with teams of 10+ production staff
  • Strong working knowledge of HACCP, food safety standards and GMP practices
  • Practical skills in production planning, portion control and yield management
  • Familiarity with blast chillers, vacuum packing and basic commercial food equipment
  • Comfortable with numbers: inventory control, basic costing and production reports
  • Ability to work early mornings, weekends and public holidays on rotation
  • Eligible to work in Singapore (Singapore Citizen, PR or valid work pass holder)

Work schedule

Typical week: 5.5 days per week, including weekends and public holidays on rotation.

  • Early prep shift: 05:00–14:00 (common for production lines)
  • Mid shift: 07:00–16:00 (overlaps dispatch and packing)
  • Occasional split or extended shifts during peak menu launches or events
