About the role

Sugar & Spoon Patisserie is a boutique patisserie located in the East Coast / Katong neighbourhood, specialising in celebration cakes, wedding orders and plated desserts for cafes and events. We blend classic pastry techniques with contemporary cake design and maintain a steady flow of custom orders across weekdays and peak weekends.

The Cake Decorator will be responsible for translating client briefs into finished cakes — from structure and crumb-coating to detailed piping, fondant work and sugar flowers. This is a hands-on role that combines precision, creativity and the ability to manage multiple orders to agreed timelines.

You will work closely with the pastry chef and front-of-house to schedule collections and ensure consistent product quality. This role suits someone who enjoys a workshop-style production environment, has an eye for detail and wants opportunities to develop advanced sugarcraft and wedding-cake skills.

Key responsibilities

  • Decorate and finish celebration cakes to client specifications using buttercream, fondant, ganache and modelling chocolate
  • Execute piping, texturing, airbrush and hand-painted finishes with consistent quality
  • Construct multi-tiered and structurally sound wedding cakes; assemble and transport when required
  • Prepare and portion decorations (sugar flowers, chocolate decorations) in advance to meet production schedules
  • Maintain accurate order tickets, timelines and coordinate pick-up/collection times with front-of-house
  • Monitor inventory for decorating supplies (fondant, food colours, piping tips) and alert management for re-orders
  • Adhere to food safety standards and maintain a clean, organised workspace (HACCP/food hygiene best practices)
  • Train and mentor junior decorators and assist during high-volume periods

Requirements

  • Minimum 2 years' hands-on cake decorating experience in a bakery, patisserie or bespoke cake studio
  • Proven skills with buttercream, fondant work, piping techniques and basic sugarcraft
  • Experience assembling multi-tiered cakes and understanding of internal support systems
  • Strong attention to detail, a steady hand and an eye for colour and finish
  • Able to read and follow recipe cards, order tickets and work to tight deadlines
  • Physically fit to stand for long periods and lift cake tiers safely (up to 15kg occasionally)
  • Flexible to work weekends and public holidays on rotation
  • Eligible to work in Singapore

Work schedule

Typical week: 5.5 days per week, including weekends and public holidays on rotation.

  • Early production shift: 06:30–15:30 (prep, baking, morning collections)
  • Day shift: 09:00–18:00 (finishing, client consultations, afternoon pick-ups)
  • Occasional split shifts during peak wedding season or large custom orders
