About the role

Don Signature Crab is an established Singapore F&B group known for its modern seafood concepts and neighbourhood dining. We have expanded to include a specialty coffee café adjacent to our flagship outlet in Katong, aiming to pair high-quality espresso and brewed coffee with a curated brunch menu.

The Senior Barista will be responsible for maintaining a consistent, high-standard coffee programme: pulling and dialling espresso, managing espresso equipment, training junior baristas and developing seasonal beverage offerings. You will work closely with kitchen and FOH leadership to deliver a cohesive guest experience for both the weekday crowd and weekend diners.

This role suits an experienced specialty barista who cares about bean quality, extraction consistency and developing a small team. We offer structured on-the-job training, opportunities to lead coffee tastings and scope to contribute to menu development and pop-up events.

Key responsibilities

  • Lead coffee service during shifts: prepare espresso, milk-based and filter coffee to quality standards
  • Train, mentor and roster junior baristas; run regular calibration and skill sessions
  • Maintain and perform basic preventive care on espresso machines, grinders and brewers; coordinate repairs with service technicians
  • Manage coffee inventory, stock rotation and liaise with green bean suppliers for orders
  • Create and refine beverage recipes and seasonal specials aligned to the café menu
  • Ensure consistent latte art standards and drink presentation across shifts
  • Oversee opening and closing checklists, cash handling and shift handovers
  • Maintain hygiene and safety standards (SS 574 / food handling practices) and ensure compliance with SOPs
  • Assist management with barista recruitment, rostering and performance feedback

Requirements

  • Minimum 3–5 years experience in specialty coffee roles, with proven barista and shift-leading experience
  • Strong espresso extraction knowledge and ability to dial in grinders and machines (experience with La Marzocco or similar an advantage)
  • Consistent milk texturing and latte art skills; familiarity with manual brew methods (V60, AeroPress, Chemex) and batch brew
  • Experience training or mentoring junior baristas and running calibration sessions
  • Good communication skills, customer-facing confidence and a service-first attitude
  • Willingness to work flexible hours including early mornings, weekends and public holidays
  • Basic food hygiene awareness; willing to obtain food handlers' certification if not held
  • Physically able to stand for long periods and perform repetitive tasks in a busy café environment

Work schedule

Typical week: 5.5 days per week, including weekends and public holidays on rotation.

  • Morning opening shift: 06:30 – 14:30 (breakfast / brunch focus)
  • Afternoon / early evening: 11:30 – 20:30 (service overlap and events)
  • Occasional split shifts during weekend peak periods
