About the role

Don Signature Crab is a popular casual-dining seafood and coastal bistro expanding its menu to include a dedicated wood-fired pizza programme. We cater to families, weekend diners and the post-work crowd in the East Coast / Katong neighbourhood and are looking for a practical, hands-on Pizza Chef to own the pizza station.

The role centres on operating and maintaining a high-temperature wood/stone oven (or similar wood-fired equipment), producing consistent dough and toppings to the restaurant's standards, and assisting with menu development for seasonal pizzas. You will work closely with the kitchen team and FOH to ensure timing and product quality during busy lunch and dinner services.

This position suits a candidate who enjoys a fast-paced service environment, understands wood-fired pizza techniques (Neapolitan/Artisan styles), and can train junior cooks. There is opportunity for cross-training in other kitchen stations, stable weekly hours with rostered days off, and progression into senior kitchen roles as we grow our concept.

Key responsibilities

  • Operate and maintain the wood-fired / stone oven, ensuring correct temperatures and oven rotation
  • Prepare and stretch dough, portion bases and manage proofing schedules to maintain consistent product
  • Assemble pizzas to recipe specifications, control portioning of toppings and cheese
  • Monitor food quality, appearance and taste; reject any product outside standards
  • Manage mise-en-place for the pizza section and assist with inventory control for pizza ingredients
  • Train and supervise junior cooks and commis on pizza techniques and oven safety
  • Work with head chef on seasonal pizza ideas, recipe testing and ingredient sourcing
  • Ensure strict compliance with food hygiene, COSHH and workplace safety procedures
  • Coordinate with FOH during service to manage timings and ticket flow

Requirements

  • Minimum 2 years’ experience working on pizza or wood-fired ovens in a restaurant or pizzeria
  • Practical knowledge of dough handling, proofing and high-temperature baking techniques
  • Ability to manage oven temperatures and wood/heat control or equivalent gas/stone oven experience
  • Familiarity with food safety practices; valid basic food hygiene certification preferred
  • Physically fit and able to work standing for long periods; comfortable in hot kitchen environments
  • Willingness to work evenings, weekends and public holidays on a roster
  • Singapore citizen, permanent resident or valid work pass holder with right to work in Singapore

Work schedule

Typical week: 5.5 days per week, including weekends and public holidays on rotation.

  • Split shifts: morning prep (10:00–15:00) and dinner service (17:00–23:00) during peak periods
  • Straight evening shifts (15:00–23:00) for full-service coverage
  • Occasional early morning or supplier shifts for dough production and deliveries
