About the role

Don's Signature Kebab & Grill is a fast-casual Mediterranean grill located in the Clarke Quay precinct, serving charcoal-grilled kebabs, rotisserie meats, wraps and mezze to a mix of office lunchtime diners, tourists and evening crowds. We combine fast service with quality produce and aim for consistent flavours across high-volume shifts.

The Kebab Chef will lead the grill and rotisserie section, oversee daily prep and portioning, maintain marinade and spice profiles, and ensure food safety and plate quality during peak service. You will work closely with the head chef to maintain stock levels, execute daily specials and train junior cooks.

This role is ideal for cooks with solid experience on skewers, rotisserie or charcoal grills who want stable full-time employment in a busy central location with opportunities to develop menu items and progress to senior kitchen roles within a small group.

Key responsibilities

  • Operate grill, rotisserie and skewer stations during service to deliver consistent portion sizes and cooking quality
  • Prepare and marinate meats, cut and portion produce according to recipes and yield targets
  • Maintain and adjust spice mixes, marinades and cooking times to preserve menu consistency
  • Manage mise-en-place and ensure readiness for lunch and dinner rushes
  • Supervise and train junior cooks and helpers on safe knife use, skewering and grill techniques
  • Monitor stock levels for the section, report shortages and assist with stock rotation
  • Ensure kitchen hygiene and food safety standards are met (cleaning schedules, temperature logs)
  • Assist head chef with daily specials, tasting and recipe trials as required

Requirements

  • Minimum 2 years' hands-on experience working with grills, rotisserie or charcoal cooking in a commercial kitchen
  • Proven ability to manage a grill/rotisserie station during high-volume service
  • Good knowledge of meat handling, portion control, marination and basic butchery for kebab cuts
  • Able to read and follow recipes and maintain consistent food quality
  • Willingness to work shifts including evenings, weekends and public holidays on rotation
  • Basic English for kitchen communication; able to work in a multicultural team
  • Must be eligible to work in Singapore (Citizen, PR or valid work pass)

Work schedule

Typical week: 5.5 days per week with rostered weekends and public holidays on rotation.

  • Split lunch and dinner shifts (e.g. 10:00–15:00, 17:00–22:30)
  • Straight evening shift for grill/rotisserie staff (e.g. 16:00–23:00)
  • Occasional early starts for prep days (e.g. 07:00–15:00)
